Tonight's diner......
Bison meat balls with spinach
  • 2 lb ground bison 
  • 1 brick frozen spinach 
  • garlic 
  • onion flakes or whatever you have 
  • a dash of worcestershire sauce 

roll into balls and bake in the oven 350 for 25-30 min

I then added them to a pan on the stove and added a large can of crushed tomatoes
rosemary, Salt and Pepper and a can of Coconut Milk.   mixed all together.   Voila



And faux mashed
(cauliflower mashed)

Large head of cauliflower cut into med pieces and put in a pot to boil
once soft drain water and mash away.   You can also toss it in a food processor, that works great too
I added some butter, garlic and salt and pepper to give it some flavor.

    I am new to blogging SORRY it has taken so long to write back.

    @ Justine... about the Bison I am not sure where you live.. but I get ours from a meet shop. I also know many people get bison from online sources.. FYI.. It is VERY lean. but not much flavor so I recommend you adding seasonings to it.. or other meat like ground sausage. Let me know what you think of it when you try it.

    I am VERY happy to be apart of this big community. I LOVE THE texture of the faux mashed. If its a problem.. try the food processor.. that can really whip them up nice and creamy.
